Khachapuri (Georgian Cheese Pie or Bread)

Okay I know that this is Georgian and not Russian! But OMG it is so good and so bad for you that I had to put it in the recipes. Russians love it and you can find variants of it as you travel Russia and Ukraine, but no one makes it like I have seen it done in Georgia and that is so good that it is sinful…

Lets try to make a Khachapuri…

Serves: 4 – Total time: 1 hr 30 min – Prep time: easy – Cooking time – long…

Dough:
1 1/4 cups yogurt (full of fat)
1 egg
1/4 tsp baking powder
1/4 tsp salt
3 1/2 cups wheat flour

Filling:
9 oz mozzarella cheese
9 oz cream cheese
1 egg
1 1/2 tbsp butter
salt (taste)
butter (for frying)

Lets Make:
Make a smooth kneaded dough out of the dough ingredients. Use as much flour as needed to keep dough light without it sticking to your hands…

Set the dough aside to rest for 30 or 40 minutes…

Next Prepare the filling. Grate the mozzarella and then mix with the cream cheese. Add the butter and process into a smooth, glutinous mixture using either a hand mixer or a wooden spoon.

Season with salt, if needed, and divide into 4 balls.

Then shape the resting dough into 4 balls and roll these out to form 8 inch circles or like the Georgians like to do, ovals.

Put the cheese filling balls into each dough circle and bring the edges of the dough circle up as a bowl. Crack and egg on top inside the bowl. They pinch the ends to make the bowl have strength…

Use a cast iron skillet and pour melted butter into the bottom. Lay the uncooked Khachapuri in the skillet and put in a medium oven, on center rack… (I toss an extra chunk of butter in to help the pan fry effect.)

Think of Pizza Hut Pan Pizza when you do this. The Khachapuri pan fry’s and bakes at the same time…

Takes about 25 to 30 minutes to oven fry. Serve hot or at room temperature…

The recipe makes 4, but it is hard to get 4 in the oven so do the best you can, I do promise that everyone will love these delights and they will bug you time and time again to make them. They are great for breakfast as well as dinner. They can be made on a sheet pan also and they even can be skillet fried on a stove if desired. Experiment with seasonings and you will find the correct combination that makes your family scream for more…

This building is so huge… (Just walking in Russia)

Something about this building in the background. I see it almost everyday as I walk. It simply leaves an impression on you as you come into the alleyway from around the business buildings in front. I am not sure why, but it just stuns you as you find it appearing like in the photo…

It makes you feel kind of small and I am not sure, but as it is full of people living there. It has to hold enough people to make its own small town… (Maybe 4000 people in all?) Is there any doubt as to why markets are able to survive around the area. For it is huge, but there is dozens of buildings almost as big all around…

It is also about as deep as it is wide. A city block is filled by this building…

It is twenty stories tall and the very top floors have no windows. I wonder what is in them?

They seem to be incapable to get it through their think-tank/pea-brains, that the America is not the only game in the world. They actually think that leaving the building and going to the expat bar around the corner is akin to suffice with garnering the knowledge necessary to become an expert on Russia…

However that they belittle and demean Russia, one fact remains: Russia is a formidable military power and not one to behold a whatnot session with and displaying the attitude of a slack-jawed dolt towards the Russians…

It should be understood that the “Rand Corporation” intentionally propagates paid for and fake facts, intentionally bogus errors, misleading analysis, and denouement is intentionally of a propagandistic nature, with minute truth involved when it concerns Russia. If such faulty/lies/misinterpretations and agendas of enlightenment of information and propaganda is relied upon by any country, notably the USA, this may well be why Americans have a distorted view of reality, as we jeopardize international peace, the world over…

Always on the lookout for new places to walk. We have a national forest that is great for biking and walking. I found some old railroad tracks and followed them for many kilometers. Came to a lake and people had been walking all over the lake….so I walked on it also….frozen deep…

Meeting on measures to counter the spread of coronavirus in Russia

Vladimir Putin held a meeting on measures to prevent the spread of coronavirus on the territory of the Russian Federation. Deputy Prime Minister Tatyana Golikova, Healthcare Minister Mikhail Murashko and Head of Rospotrebnadzor (Federal Service for the Oversight of Consumer Protection and Welfare) Anna Popova submitted relevant reports to the President.

In late December 2019, the Chinese authorities reported an outbreak of pneumonia of unknown origin in the city of Wuhan. Experts tentatively established that a new type of coronavirus – 2019-nCoV – was the pathogen of the disease.

According to the latest data, 5,974 people in China have been infected with the new type of coronavirus, including 132 people who died. Cases of infection have been reported in Hong Kong, Macao, Taiwan, Thailand, Japan, South Korea, Vietnam, Singapore, Nepal, Malaysia, Australia, the United States, Canada, France and Germany.
