Windows to Russia

This is one of the best fish pies ever created. It’s perfect for that party as it can all be made well in advance, even several days. It is just as good and preferred chilled.

Prep and chill all ingredients thoroughly, first. Then all you have to do is cover it with a wrap and leave in the cooler until needed, then pop it into the oven just before you serve to family and or friends….

Serve it cut in slices, with a large bowl of mixed-leaf salad tossed in a lemon flavored dressing. Or you can simply melt some butter with an equal quantity of lemon juice and serve it with that spread on top…

Good for the whole family or as a party dish…

Gather Ingredients!

Cook – 500g/1lb 2oz salmon fillet, skinned and or not
Cook – 175g/6oz Brown rice
Boil three eggs hard in shell
75g/2¾oz butter, plus extra for greasing
2 onions, roughly chopped (leave raw)
2 garlic cloves, crushed (leave raw)
1 small fresh red chili, finely chopped (leave raw and or maybe not! HOT!)
200g/7oz button mushrooms, sliced and cooked
½ large lemon, zest and juice only (get those seeds out of there)
2 tbsp chopped fresh parsley (leave raw)
1 tbsp chopped fresh chives (leave raw)
salt and freshly ground black pepper to taste

some sheets of frozen pastry

Lets make!

I take all ingredients and mix together in a big bowl. Well except the pastry and enough butter to grease the sheet pan with and also baste the top with as it cooks…

That means eggs chopped up, cooked fish chopped up, cooked rice, cooked mushrooms, chili pepper, cloves, onions, some butter, some lemon, garlic, salt pepper, chives, parsley and whatever else you want in it. Mix it all together. I mix it well and do not care if you can see any chunks of fish. Just make a big thick paste out of it…

Once all ingredients are mixed, set aside in refrigerator covered until needed. That is why the fish and some things are cooked first. The dish is designed to be made in stages, kinda a Russian thing I guess…

I prefer to make and cook all the same day. Some will make it all and even let it sit ready to bake for several days. So my recipe varies from the Russian way and it is because I do not like to let fish sit around waiting… Cooked or not!

For the sauce to mix with insides!

100g yogurt non flavored
1 small bunch fresh parsley, chopped
1 tbsp chopped fresh chives
½ large lemon, juice only

Mix sauce ingredients together early in the morning on the day you will bake it and allow to sit in refrigerator once mixed with the other stuff several hours. Allows everything to thicken and set up somewhat…

Take first bowl of fish and stuff you mixed! Add second bowl into first (I said big bowl earlier,) of sauce and stir thoroughly. Makes a thick pasty substance. Some leave the fish out and stick the fish in as a whole piece, before baking… What ever!

I grease a sheet pan and or use a oven wax paper. Lay a sheet of pastry from the pack on it and if you need two sheets use them side by side, Use your imagination for this. I let the sheets thaw slightly and squeeze them together at the seam. You need a big enough sheet to plop all the mixed stuff on and after mounding it up, allow you to cover the whole thing with another sheet of pastry. Puff pastry works great for this..

Once all stuff is inside a big pastry shell and it is laying on a sheet pan ready. Bake the thing at 425°F(220°C) for about 25 minutes, brushing with butter, egg whites and or whatever it is you do. Many times I brush with nothing and it still browns okay! Since main stuff is cooked, all you really are doing is cooking the pastry and no need to over do it…

I like to cut slits in the top, helps steam escape. Some like to make pretty designs and such, but I just like to eat it! 🙂

I say eat it warm, not blistering hot, but eating it cold is only done by me at friends houses. I like it, but fish to me is a warm food! Just my upbringing…

This is a do it as you please type dish. It really is designed to use up whatever you have left over. Since Russians always have lots of salmon hanging around, it is a natural for this dish. You can use any fish, but real fatty fish? Drain well, no need for tons of fat… Just toss in what ever spices you like and bake it. You will like it and as you eat it, realize that Russians love pies like this…

Today I was walking Boza and it was around noon.

All of a sudden the air was full of that long running, wailing, lower and higher at a top decibel siren associated with air raids…

The world got very quiet and mothers hurried their children in strollers to their homes, babushkas hobbled home and it seemed that even the cars stopped moving. Everything got quiet and even the crows stared around at what was filling the air…

A babushka hobbled near us (Boza and I) and she was crying tears from her eyes. She was going on in a panic and was actually going in a circle. She kept looking at the sky and I put her at almost 90 years old…

My heart sank and a fear for these people welled up in me…

I went to her and offered her my arm. She looked at me, little tears running down her face, she then looked at the sky and said, “воздушный налет! (air raid!)”

I shook my head no and pointed at the buildings and said, “домой! (Home!)”

Then she pointed at the nearest building and the second door to the right. I walked her slowly to her door, with her holding on to my arm with a death grip. She had the strength of fear in her and Boza and I left her after she went in, muttering thank you…

She had said many things to me as we walked arm in arm and she kept looking at the sky. She was shaking as if she was frozen to the point of death and to be truthful, I am sure she has lived through what an air raid truly is about. I have…

I wonder what she would think if she knew I was an American, one of the same people that want her dead? At least in their eyes we do! That makes me sad and it makes me angry at my government for doing such things. I am not stupid and it is clear as day who is instigating what is happening in the world right now…

For over a half an hour the sirens wailed.

Boza and I walked in an empty world and to be honest, I was not sure if we would still be on earth, for if it was not a test and I have never heard a test yet in Moscow. Ten years I have lived here in Russia, and this is the first one I have heard…

Boza and I walked and I kept working with him, for he is very blind and when the sirens stopped, we went home. Before we got home, the world started to move again. Mothers pushing strollers, cars seemed to move again and the local grocery store opened their gate to receive food items…

It had all come to a stop…

Now I am writing about what happened.

It is important, very important, for it tells me about our mortality and what could be coming when these sirens go off. It could have been today that we all die and I realized that Boza and I would walk into the new sunset that would be produced…

My distaste for what America is doing has just grown. I will send an e-mail to my son today. I will tell him to get ready and I do hope he has what it takes to get ready for what might happen if America does not back off…

I don’t think that we are any farther away from a minute away on the Doomsday Clock, even if the clock is saying three minutes till. It was last updated in January of 2015 and much has happened since then and it looks and feels to me as if we are just seconds away now…

Today I wish that Svetochka, her mother, Boza, my son and his family and her (Svetochka’s) son and family were all in the Tiny Russian Village with me. I wish I was there right now, but I have to figure out how to get Svetochka and entourage there with me. For I understand and have figured out the chances of us surviving there…

Moscow is a molten pool of radioactive liquid, if war breaks out, just like New York City will be. But the Tiny Russian Village is very far from everything, at least everything that will be bombed. If the wind is right, we will make it…

For some reason I want to live and see the new world, but if I can’t? I will watch the fireworks, for hiding under a million tons of rubble and molten rock, is not the answer for me. But if I am able, I want to see what becomes of us, if a Nuclear War breaks out…

But when one side (Russia) of those so called games is serious and the other (America) thinks they are being cool. Then the game player (America,) who is doing it for internal political, distractions and Geopolitical reasons, is playing with fire…

My cracked tooth was saved by my dentist. They worked at grinding it a little bit and then were able to use an acrylic filler and rebuilt the tooth. She did a good job and now I have a whole tooth again. But, if I break it again? I will be looking at root canal and a crown… 🙁

I am always amazed at the cost and the quality of work that the dentist do here in Russia. I have used private and state clinics in my past and always get the same good work. Cost is half of what it would be in the states and most of the time less than that…

Now it is time for me to go get a checkup! I have my diabetes fairly under control. My average readings over six months is 6.1 mmol/l, which I wish it was in the five’s. But hey, close enough for governmental work! 😉

I have an issue that looks like the start of a hernia near my bellybutton and we have to have that checked out. I do not want that to get out of hand…

I also need to just be generally looked over and see if I am still alive! I think I am, a doctor can make sure! Right?

Soon I hope Boza and I can get back to the Tiny Russian Village. Boza is sad and slightly depressed, what with his eyesight bad and being cooped up all the time. Him and I walk as much as possible but we both seem to be getting stressed at the mass of humanity and doggies everywhere. Moscow is one huge city and us two country boys are having a very rough time dealing with all the people and such. You can not walk anywhere without hundreds of people always crowding around. So Boza and I get up at 4 a.m. and walk every morning. We usually find peace and quiet at that time…

It is really and truthfully a nerve racking issues with him and I!

I have to say something about the west trying to make excuses to ban RT and or other Russian news sites from their countries. RT has hit a nerve in many western countries and the Main Stream News and the politicians in these so called free countries are scrounging for a reason to ban RT, Sputnik and several other news organizations from Russia from their airwaves…

Strange how all the western news is available right in our face here in Russia, but the west, when they have it presented back, get all nervous and want to cover up the truth. Even if it is the truth from another point of view, it is the truth. I thought the west was self-proclaimed as freedom?

Britain has pushed its banks to block RT’s accounts and it has been well known that in America and Britain, that they want to block RT from the internet and airwaves…

LOL and all they will do is make RT a stronger presence by the wonderful publicity….They will never learn….Making a martyr is an easy thing to do…

I find it interesting about the disinformation in the west about Russia. I live here and what I see is something totally different than what you are led to believe. This image is of a typical grocery store in Moscow. If you come about an hour from when I took this image, you will find the store packed and the other five just like it nearby will be the same…

Fully stocked and everything available that you would ever need. Also priced much better then what you would most likely buy it at, especially in the west…

Russians make anything and everything that can be sold and made money off of. With the exception of a few tiny hiccups, Russia has filled the gap and exceeded in both quality and price any products that were effected by the sanctions and counter sanctions. The only issue I see is; Russians need some lessons on how to order and stock properly, but they do get it done given time…

Everything you see in front of you is Russian grown, Russian made and Russian designed and built. The stores in Russia are unbelievable and stocked to over flowing…

We even have my favorite store; the equivalent to an American dollar store. These are my favorite stores, I can buy anything from stainless steel radiator clamps by the pack of ten to two liter bottles of soda and all for around 50 rubles each…

I have owned many cars! I have owned Lincoln Continentals, Mercedes, Cadillac, Lexus, Ford, Volkswagen Beetle, Ford Falcon, Chevy’s of various types and dozens of other brands and models of cars. Expensive to very cheap is my realm of experience with cars….Why I even owned a Yugo… 🙁

I have owned two Volga’s, one was a model 24-10 and the one I own now is a Volga model 310221. I have a vast background of cars. I raced cars at the drag strip when younger, I have sat in pure luxury and I have rebuilt many an engine in my time…

I can honestly tell you that the best cars I have ever owned are my Volga’s. Well to be truthful, I owned a 1969 SAAB, now that was a car and would be the only thing comparable to the ease of working on a car, to the Volga. Now I do wish I had some of my old Muscle Cars I owned….1969 Ford T-Bird 429 Thunderjet and a 1969 Dodge Challenger with a 440 Magnum engine. I also had a 1964 Plymouth Satellite with a 383 Commando engine and it was the cats meow…

Any of those last cars would make me one rich man in this day and age. I could not even fathom what I could sell one for here in Russia, but I would live off the interest the rest of my life. That I know…

The Volga is the car made for me. It is simple and tough as shoe leather. It can be held together with bailing wire and duct tape and get you home. I know, I have owned two, bought used and have driven many a kilometers around Russia, Moldova, Ukraine and other places in a Volga. Trust in the product is what comes to mind…

Shame that Volga’s are no longer made…

Sammy the Volga is going to get some new body parts. Our friends in the Big Village, who put in her new engine, will scrounge for parts and weld in new rocker panels, install used doors and paint her for little to nothing. One thing that our mechanic wants to do is install a diesel turbo for a zmz-405 Volga engine, he has sitting around. Doubtful, but would be fun in the sun to have a boosted Sammy Volga, to tool down the road in… 😉

Money is the issue and fun is related to the money you have. The money has to go for what is necessary and not for fun and games anymore. But a bear can dream…

We will get Sammy good to go another 10 years and that is what is necessary…

Just like we bought two front tires for Sammy. South Korean made and very high quality. Steel belted radials and they cost American Dollars equivalent $20 bucks each. Kumho brand to be exact and I have worn several pairs out in the last ten years…That is a many a kilometer to be for sure…

We have in Russia, for the most part a very material life and when I see Americans spout about how great America is and how wonderful to be rich! I get disgusted, for to be honest, the world has as much or more than what we do in America and propaganda has led you to believe that only your little spot is perfect and nothing else matters…

I am still amazed and still put out when I get and see comments and emails about, “Just leave America if you like it so well, go somewhere else!”

Good idea and if more Americans would just do that! The world would be a better place, for you would see that everyone is just like you and you need to get off the high and mighty pedestal…

There is nothing that America can offer that is not already in plentiful supply to rich or poor all over the world. We have exceptions, but exceptions are just that, exceptions and the general status is plentiful…

Exceptionalism is the word that is well known for Americans to be spouting. This word is used from our politicians to trolls commenting on foreign websites…

Exceptionalism = Narcissistic Personality Disorder and is closely related to Grandiosity; which is a very unhealthy unrealistic sense of superiority to others…

All I know is that when I walk among the natives of other countries and watch life flowing around me. I realize that we, The Americans, The Exceptional Ones, The Best the world has to offer, are the ones who are isolated and in a prison of our own makings….Life is good in America, but life is just as good elsewhere and until you come to grips with that and stop the killing of other people and other countries, that are happy as they are with their life as it is. Life can not become peaceful and polite…

The day you are mingling with the people of a country like eg. Tunisia and eating dinner with them and walking the streets with them. Then you will see that life is really exceptional all over the world…

That is just one tiny example and I have been all over the world…

It is interesting to sit with Russians and talk politics! Russians know how to talk through the subjects of political waste lands and discuss with a open mind, all the while playing a chess game at -20 below zero, outside as it snows and discuss why the world sucks…

Now that is exceptional to a tiny degree in my eyes, but Russians would disagree with you and tell you that, “It is simply life in Russia!”

Now that is a thought!

Foxconn can produce 10,000 robots annually. By using robots to build more robots. I have been reading how robots and the AI is and are able to adapt and adjust themselves to changing conditions. What use to take days or weeks to change production lines and redo software, now can be done over night, by the AI. The AI learns as it runs the factory and adapts to changes faster and faster as time goes by…

These industrial robots teach each other new skills while we sleep… Interesting read…

Humans are becoming obsolete and it is growing exponentially…

I went into a McDonald’s today. Just to look around. Use to be six cashiers and now one cashier. The rest were electronic kiosks. Front employees were two, just two. One cashier and one gathering food. No one was using the human cashier and she stood there bored and her eyes were closed. Was it busy?

It was very busy and the kiosks had lines at all eight of them. These kiosks take only cards, such as in credit cards and or bank cards. These kiosks even have English as a language choice…

Lots of help in that back of the house and they still could not keep up with the flow of traffic. I decided to get a cheeseburger. I walked up to the half  asleep girl and ordered one cheeseburger here (один чизбургер здесь); she took my cash and in less than a minute I got my food. I ate it on the way home and realized that all those people in line are still waiting for the system to work and grind slowing along. In a McDonald’s, cheeseburger is fast and no issue. But! If I had used the kiosk, I would still be there…

Yes Russia the Third World Country ~Sarc~ has electronic everything all over the place in Moscow…

No way before that! Way before Libya was destroyed. No way before even that you are thinking of before that and even before that. Getting closer, but think farther back yet and you will get close enough. Other words, this is nothing new and nothing by accident…

I know, I have been in the middle of these wonderful destroy and control the world conversations, over drinks and fine dinning and seriously, there are people all over the world behind what is happening right now. I choose to stay out of it all and made my decision many years ago to stop killing innocents…

What I do not understand is why, after we now have bonafide facts, solid information and decisive data, do we sit on our asses and look the other way?

Something interesting…

I have searched for ten years in Russia and cannot find peppermint candy. None in any form and I love peppermint candy canes. Never found them and never seen them…

Hmm…

Really do not need them, but once again, the holidays are coming and peppermint canes are synonymous with Christmas. Well to me they are and I miss those canes. My grandma use to cover her tree with them and it was easy to find me as a little one, running around like an idiot, with a candy cane in his mouth. Not sure how I never fell and drove it through my brain? I survived my stupidity though and still surviving my stupidity…

I talked about maple syrup many years ago and now someone is getting rich selling maple syrup in Russia. I talked about peanut butter and now it is available all over. I guess now I will talk about Candy Canes and hope that in the next few years someone sells them in Russia…

It is not that I need it, but you know! When you cannot get something and keep thinking about it, it becomes an obsession. Like Taco Bell! Taco Bell sucks, but all the time I think about that damn Burrito Supreme, with all that sour cream oozing out of them, as you bite into it…

I have to say something…

I am afraid that Russia is and has reached its limit with America. America has expressed bellicosity and almost passed the point of no return. Russia and the Russian are not afraid of America. Russians could be the best friends in the world and truly want to be, or they can, if pushed hard enough, be the worst adversary that we could imagine…

A few more stupid-ass expressions of pugnaciousness by America and America will cross the Rubicon with the Russians….All the while that the Russians want to be friends….I just do not get it and wonder why we have become so truculent and obstreperous?
