Someone told me that this drink is called a “Poor Man’s Drink” because of the small number and easily obtained ingredients that are required. I have said that eggs are plentiful in Russia in past recipes and as is sugar, flour dark bread, butter and other items used here. It also is high in protein and calories which makes it a great food for the long winters in Russia…

In fact the name is famous in Russia and they even have a fantastic restaurant named after this combinations of words. Gogol-Mogol. The recipes are plentiful and the reasons for the recipes are just as prevalent. I think it all boils down to availability of ingredients and the ease of production. Even children make these recipes all the time…

How about a story?

A legend says that once upon a time there lived a man by the name of Gogel. He sang in a band in a village of Mogol. A village that is located in Russia. One day Gogel caught a sickness like a cold, in his throat and his beautiful voice was silenced and he lost his job as a singer. Whatever he tried to do to recover his voice, nothing helped. Then an old remedy of folklore was given to him by friends. It was made up of raw eggs and at the time wine. Gogel seeing a good thing also mixed the eggs with sugar to allow it to swallow better and his voice got better right away. The remedy helped and Gogel proclaimed it a miracle cure for the common cold. It got the name Gogol-Mogol…

Lets make a Gogol-Mogol – here are two separate recipes to use and as you see there is many variations…

Ingredients as a non-sweet drink/solid:
3-6 fresh eggs
2-4 pieces of black bread
1 pinch each of salt and pepper

Method:
Wash the eggs thoroughly. Break the eggs into a bowl. Wire whisk vigorously until almost foamy. Add salt and pepper then mix again, until it is foamy. Pour in a tall glass with a  long spoon, with crumbled chunks of black bread dropped into the foamy egg mix. Eat with the spoon and add bread as necessary until all gone…

Or:

This is how some Russians make it as a sweet drink:
In a bowl beat two raw eggs with a tablespoon full of honey. Mix vigorously until it’ is foamy, with a wire whip. In a sauce pan heat half cup of milk with a tablespoon of real butter. Butter should melt completely. Milk should be very hot, but not scorched. Pour hot milk and melted butter into a large cup with the whipped foamy egg and honey. Stir quickly to mix well as you mix the ingredients in the cup…

Drink, while it is hot, by sips. You’ll feel the cure spreading inside you at a vigorous pace. Go to bed and in the morning you’ll feel much better…

No matter how you make it and for what reason that you make it. Gogol-Mogol is considered good for you and healthy…

Chuk-Chuk – here a chuk there a chuk everywhere a chuk chuk…

Today lets make Russian Style Chuk-Chuk: These fried, honey-coated fingers from Windows to Russia make a great way to satisfy any sweet desires – Russian style! (The origin of this recipe comes from Tatar.)

Children young and old love Chuk-Chuk and it can be bought at most any store in Russia. But the best Chuk-Chuk is home made from natural ingredients. So lets make some delicious Chuk-Chuk today…

Chuk-Chuk Strip Ingredients:

* 4 Eggs
* 2 – 3 tbsp Sugar (I use 3 tbsp of powdered sugar)
* 2 tsp Butter
* 1/3 tsp Salt
* 60ml Milk
* 500g plain flour

Ingredients for the Syrup Coating:

* 1 1/2 cups Honey
* 4 tsp Sugar

Mixing and Cooking:
1. Blend eggs, sugar, butter, salt, milk and flour and knead until the mixture forms a smooth dough.

2. Leave the dough to rest for 30 to 40 minutes.

3. After resting the dough: Roll out dough into a thin layer with a rolling pin and cut into strips about 2 -3cm in length and 1 cm in width.

4. Place the honey and sugar in a saucepan over medium heat and stir until the sugar is dissolved. Continue to cook until the mixture thickens and turns an amber caramel color. (Do not over cook and burn. Sugar and especially honey will burn easy. A good way to heat the syrup is in a double sauce pan. With water in lower sauce pan.)

5. Heat the oil in a frying pan on medium heat and then fry the strips you made earlier for about 5 minutes, until golden brown. (Drain oil off on kitchen paper on a plate.)

6. Once drained of excess oil, dip the strips into the hot syrup you just made.

7. Arrange in piles on a serving plate.

8. Serve immediately and say – Yummy!

Hard to image that there are millions and millions of people in my way all the time… (Moscow, Russia) – I went deep into what is called the National Park (Elk Island)…

Just to go get groceries is like a bunch easier if you take a stick to beat a path through the people to get there. It drives me crazy at times, yet even in all these people, if you are willing to walk, you can find a tidbit of nirvana!

But I did find dogs, cats, birds and tons of squirrels….it is one humongous Federal Reserve….oh, and one guy skiing naked (Yes, butt stark naked)! Wish I had my camera ready….but he was not really a pleasant sight to see. 🙁

It was also -10 below zero as I walked. Russians are crazy…

33,000 steps and 27 kilometers total….after look at the map, I realized I was less than 5 kilometers away from Moscow’s famous MKAD (МКАД) ring road…

Now time to get to work and be productive…

Even though the dentist lady doctor beat me up. I still felt good enough to walk 18 kilometers. It got real nasty weather wise before I got home…

Over three hours of walking and gawking…

My goal is to get able to walk 25 kilometers every morning. My heart needs it and my sweet pea needs it to have me stay alive for many years to come. My diabetes needs it also…

Finally got my root canal done. Cost us about 15,000 + rubles and I am still alive. Big Bears like me do not like dentists and my sweetie has to drag me into the dentist office…

Went to dentist again and long walk in the snow…

They did a very good job. They best job at a dentist I have ever had…

Okay I know that this is Georgian and not Russian! But OMG it is so good and so bad for you that I had to put it in the recipes. Russians love it and you can find variants of it as you travel Russia and Ukraine, but no one makes it like I have seen it done in Georgia and that is so good that it is sinful…

Lets try to make a Khachapuri…

Serves: 4 – Total time: 1 hr 30 min – Prep time: easy – Cooking time – long…

Dough:
1 1/4 cups yogurt (full of fat)
1 egg
1/4 tsp baking powder
1/4 tsp salt
3 1/2 cups wheat flour

Filling:
9 oz mozzarella cheese
9 oz cream cheese
1 egg
1 1/2 tbsp butter
salt (taste)
butter (for frying)

Lets Make:
Make a smooth kneaded dough out of the dough ingredients. Use as much flour as needed to keep dough light without it sticking to your hands…

Set the dough aside to rest for 30 or 40 minutes…

Next Prepare the filling. Grate the mozzarella and then mix with the cream cheese. Add the butter and process into a smooth, glutinous mixture using either a hand mixer or a wooden spoon.

Season with salt, if needed, and divide into 4 balls.

Then shape the resting dough into 4 balls and roll these out to form 8 inch circles or like the Georgians like to do, ovals.

Put the cheese filling balls into each dough circle and bring the edges of the dough circle up as a bowl. Crack and egg on top inside the bowl. They pinch the ends to make the bowl have strength…

Use a cast iron skillet and pour melted butter into the bottom. Lay the uncooked Khachapuri in the skillet and put in a medium oven, on center rack… (I toss an extra chunk of butter in to help the pan fry effect.)

Think of Pizza Hut Pan Pizza when you do this. The Khachapuri pan fry’s and bakes at the same time…

Takes about 25 to 30 minutes to oven fry. Serve hot or at room temperature…

The recipe makes 4, but it is hard to get 4 in the oven so do the best you can, I do promise that everyone will love these delights and they will bug you time and time again to make them. They are great for breakfast as well as dinner. They can be made on a sheet pan also and they even can be skillet fried on a stove if desired. Experiment with seasonings and you will find the correct combination that makes your family scream for more…

An old Blodgett oven is the perfect oven to bake these in…

Something about this building in the background. I see it almost everyday as I walk. It simply leaves an impression on you as you come into the alleyway from around the business buildings in front. I am not sure why, but it just stuns you as you find it appearing like in the photo…

It makes you feel kind of small and I am not sure, but as it is full of people living there. It has to hold enough people to make its own small town… (Maybe 4000 people in all?) Is there any doubt as to why markets are able to survive around the area. For it is huge, but there is dozens of buildings almost as big all around…

It is also about as deep as it is wide. A city block is filled by this building…

It is twenty stories tall and the very top floors have no windows. I wonder what is in them?

Western foreign policy “experts” don’t have a indication about how to construct any type of conjecture about Russia. Most live in a tower in Moscow and stare out the window 50 stories up and use osmosis to gather information, as if by magic. They know next to nothing about Russian history, nothing about Russian culture and incapable of extracting any knowledge and comprehension about the strength and depth of Russian technological skills. They seem to be incapable to get it through their think-tank/pea-brains, that the America is not the only game in the world. They actually think that leaving the building and going to the expat bar around the corner is akin to suffice with garnering the knowledge necessary to become an expert on Russia…

However that they belittle and demean Russia, one fact remains: Russia is a formidable military power and not one to behold a whatnot session with and displaying the attitude of a slack-jawed dolt towards the Russians…

It should be understood that the “Rand Corporation” intentionally propagates paid for and fake facts, intentionally bogus errors, misleading analysis, and denouement is intentionally of a propagandistic nature, with minute truth involved when it concerns Russia.
